Is there a way to split kitchen performance

We would like to be able to separate the average ticket time for FOH verses BOH. Is there a way to do this with the kitchen performance reporting?

Hi @cornermarket!! Thanks so much for posting. I'm a little confused by what you're asking. I know you can split up what items print to your printers, so if you have drinks to be made at one area and food to be made at another, they will print in separate areas, but I don't think you can change the time(s) in which they print. Can you please give me a specific example of what you mean?

Hey @AshleyK I think I can give @cornermarket a hand here...

 

With physical printers, there isn't a way to factor average ticket times unless you get your team to write the out-of-the-kitchen time on the ticket. I've also seen some restaurants use the old school timecard machines that prints the time on the ticket. You can then manually figure your average ticket times.

 

If you update to a KDS system where the tickets "print" on a tablet, you can see average times. I've used Fresh KDS in the past, and their reporting dashboard does a GREAT job of telling you average ticket times, # tickets/hour, type of ticket (dine in, carry out, etc). The only challenge is making sure your team actually closes the ticket when they take the food out.

 

Also, Square KDS has been released as well. Currently it only links to the Restaurant POS--hopefully it becomes an addon for the stock POS one day. It looks like it has the same reporting functionality as Fresh KDS.
