How do I credit a larger amount than the last transaction?

I’m a counselor and I owe a client payments that later her insurance carrier paid. I now owe her a substantial amount. The amount is more than the individual transactions. How do I process this credit?

you cannot credit or refund back more than you took in from a customer.  

A.  How can you owe back more than you took in?

B.  If that is the case you will have to refund with a check or other form of payment from your bank.
