How can I set up scheduling for different counties? I service 3+ different counties and need to group those appointments together. For instance, on Monday we service xyz county only etc. Would I have to upgrade to premium and instead of scheduling with staff members I would replace staff with counties?

HI, hopefully these Square Support pages will help.  Have you tried creating a location for each county you serve?  (Note, once you add a new location, you cannot revert back to a single location dashboard.)
