Can I add a variation to a category?

I have collections of fabric.  My variations are the individual fabrics within each collection.  In fabric certain cuts of fabric have a name ie charm pack. . . How do I get a variation into a category?

Variations can't be applied to categories at the moment. It sounds like what you're after would be subcategories - allowing you to break down specific details within a category. If you have a Square Online site, you can create subcategories via these steps. We're currently tracking subcategories for Square Point of Sale as a feature request, and we'll be sure to share an announcement once we have news on this.
