What all do we need from online orders to win a disputed Charge?

We have been having issues with a group ordering randomly LARGE orders on our website, picking the order up and then weeks later is eventually disputed.

We have the guys on camera signing the receipt and taking the massive order thru the door, and loose each dispute. Now onto number 4.

How can we possibly stop this without just ending our online ordering?

We can't suspect every order to be it, and they are passing whatever security needed to place the order. 

On top of that its a different name every purchase.

Please help. This is killing us.

With purchases over $x.xx dollars you can have a policy to ask for ID and make sure the ID matches the name on the Card.  When you do this scan the ID to get the name etc or put it to your security camera.  So if they have a Dispute it will either show the persons NAME or that it was not the person making the Purchase when they came to pick it up.  Either way you have the actual persons address from the ID to go after them for theft of services.  But if you have their ID on camera and it matches what the bank statement shows and you have the other security cameras with their Face picture, it would be hard for them to win in court and then may have other charges too.  Banks that supply the CC to their Customers just say well my customer was honest and di not make that purchase you lose store owner.  Because the bank is trying to make their customer Happy, you do not matter to them.   

I am glad so far I have not had to deal with someone disputing a charge but after seeing all these stories on here, I keep adding to my arsenal of ways to get evidence to prove these people did get the item(s) and knew they were buying them.  I have 4K cameras all over the store and even put some cheap cameras under the registers to take pictures of ID if the purchase is over a certain amount.  With all this information I collect on each transaction, would I win a dispute?   No idea, but i would rather have more evidence then required then a reply saying well you did not prove it was them because of....... whatever lie the bank comes up with.
