Hello. While updating some inventory, I noticed under item library that a category says "MIXED". I checked and every item is available. This is a recent occurrence. What changed or what did I change by accident ?

It looks like I was missing something obvious, @CannedFresh!
After checking again, it sounds like you’re likely seeing the “Mixed” message under Availability for your item because this particular item has multiple variations, each with different stock levels. In other words, some variations may be sold out, while others are still in stock.
I came across this while testing another variation feature and noticed the message appear on my dashboard when I updated the stock levels for one variation but not the others.

I haven’t personally come across this myself, but that might just be because our items and categories are configured a bit differently.
Just to make sure I'm understanding correctly, would you mind sharing a screenshot of where you're seeing the “Mixed” message in your app? Is it only when viewing an item from the Item Library on your Dashboard?
I might be missing something obvious on my end, and screenshots always help to make sure we're on the same page!
