Not sure who's even listening anymore but here goes . . .
Here's what I'm trying to accomplish:
ISSUE #1:
Item A has 2 Options Sets; an Option Set for Diameter and another Option Set for Type. I have a new plant under that Item that arrived in a combination of Diameter + Type that doesn't exist yet in my catalog. When I try to add a new Variation (Option Set combination) {Using Add More under the list of Variations on the Item Page}, the menu will only allow me to add ANOTHER Option Set. I can't pick the Diameter I need and I can't pick the Type that I need. Adding another Option Set doesn't help here beyond the fact that there is no reason to add one. Every button, drop down, link, etc. just leads to me having the only option of adding another Option Set. (See Screenshots).
ISSUE #2 (a similar issue, though slightly different):
Item B has 1 pre-existing Option Set (Diameter). I need to add a second Option Set altogether (Type). Previously I could just add the Option Set and then match the Options to whatever already existing Variations we had (match the 4", Standard to the old 4" as an example). Now, if I add the new second Option Set, my only next available step is to DELETE all previous "Variations". Square can no longer tack the new set of Options onto the old.
After a loooong time with the chat bots and phone bots and finally a very caring person who was willing to put in the time, the only answer to my need (per the chat and the phone calls) is to delete all Variations (Options set combinations) from an Item before I can add a new Variation using multiple Option Sets. Similarly, to add a new Option Set altogether to an item that already has one Option Set, I would also need to delete all currently existing Variations (Options). Not good! It used to be very seamless and thought-free. Now, it sounds like whenever i need to make these types of edits (which is often), I need to scrap my old styles and start over (losing 8 years of history, messing up Inventory reports, and wasting time).
Someone has to have a better answer here. At this point i'm not looking for the "why's" or to commiserate about Square's downhill trajectory. I'm really just trying to get my new styles into the system and in the proper places that they belong.
I'm all ears. And OK, fine, I'm good with some commiserating as well.
As an update, I figured out a workaround (for now) is to use the Square app rather than the web dashboard. It works, but my 50 year old eyes would love to see this functionality back on the web.
ISSUE #1 I have exactly the same problem! I am using the free tier at the moment. If i find anything out, i will post here.
Thanks for the heads up, it works fine on the Squareup Point of Sale (POS) app. it is also much quicker than the snail like browser version.

I just "provided feedback" on the edit item page for my business.
many times i have to add other variations/options to my already existing item and with your new update it does not allow me to do this.
you removed this ability
example; i have options of a color and MM size for 4 variations of this one item. in the past the vendor only offered this in one gauge size so i did not need to include that when i started this item. now the vendor has 3 or 4 different gauge sizes so i have to add that to my items options. when i go to add another option set choosing the gauge and including that with all the already existing variation items it only gives me the choices to delete the existing items i have which would have me LOOSE ALL MY YEARS WORTH OF DATA that i have for those items. I CAN NOT LOOSE INFORMATION just because i want to expand on already existing items with variations.
also you took out the ability to move options around in an order that makes most sense for my business.
your new update has a lot of missing pieces and you need to bring back these ways for my business and i am sure many others
I appreciate you sharing the work around with the APP but my fear is the app will update and then we will have nothing.
I really hope square does better and looks at what is missing and what we have been using for YEARS.
my normal 2hours of work has been taking more than 20 hours just to modify and update my items in retail!
