sales tax sometimes

By way of example, here's what I want to do:

Enter/add three sales charges as follows - 

$25 + ($10+Sales Tax) + $15 = $______

I sell handmade knit and crochet items.  Many items require collection of sales tax while many others are exampt from sales tax, so I cannot just have a setting to auto-add tax.  The prices vary greatly, and the items change constantly.  So, listing each item in the library (and indicating with each whether to add sales tax) makes no sense, and I dont see a way, on keypad at POS, to enter each listing price and having an option (per item) to add sales tax as needed.  

I hope this makes sense.

Is there a way to do what I need?

you can set up an item that is variably priced with tax (taxable item), and an item that is variably priced without tax Non-taxed item).  when you go to make a sale you just have to choose between those 2 items.
