I have created a draft invoice so I can be prepared when I see my client for payment at the time of service. Can I take payment right then and there from the drafted invoice? Or am I required to email it to them and have them open it from their phone to pay?
You're not able to pay a draft, as it's not yet a live invoice.
However, you can send the invoice to the customer via email so that it's an active unpaid invoice. Once you see the customer for services they would be able to pay the invoice via the Point of Sale app in person.
