The jasmine, brown and riceberry are the modifiers.
The others appear for just about every item in my checkout screen. I never entered them or assigned them.
Moreover, I have to be very careful when it comes to changing/applying both modifiers and variations in the items in the dashboard because those changes respond quite differently on my online menu versus my POS Ipad that I use to take customers' orders in my bistro.

At this time Square does not offer the ability to change those buttons. I'll be happy to move this over to a feature request board so that our engineers have visibility of your suggestion. We appreciate you sharing your request. While there is no time frame for when it will be implemented, i'm happy to make sure our engineers have eyes on your request.

What do those buttons do?
The buttons you are referring to are called Conversational Modifiers. They will include the buttons “add,” “extra,” “side,” “sub,” “no,” and “allergy” to your modifiers screen in your POS for faster order entry and improved reporting.
