Turn quantity off and use variant instead

I'm selling products that have price breaks with higher quantities. I'm thinking about using the variants to provide the different quantity options - allowing me to provide pricing for all possible quantities. This method gets confusing with the existing quantity field. Is it possible to turn off the display of the quantity field on the items?

Turning off the quantity field for items is not possible at this time, but you may want to consider our automatic discounts, which will give the price break according to the number of items in a sale, whether that be a combination of items or a specific number of one item in the sale. 

You can also just create a variably priced discount that you can apply to any sale that has multiple of one item. This will not be automatic, but you can enter a discount amount according to the number of items you have selling.
