Folks and gurus,
In our square online store/order form if a customer chooses delivery they only get one of our menu items but if they choose pick up they get to see everything. Does anyone know how we can let customers choose from all menu items for delivery?

Of course! Under the specific items in your Online Store, scroll to the bottom where it has "Fulfillment Method". This is where you can double check the items to see if the delivery option is turned on.

Despite turning on the fulfillment option for delivery for my items as you proposed earlier - i still don't see any items on my store for delivery.
Does it have to do with delivery times maybe? or opening hours?

Welcome to the Community!
Are you missing a large amount of your items? Another thing to check is to look into the stock for those items too.
Any changes made to the items should be made in the Dashboard, so it will sync to your Online Store.

My issue was resolved by itself.
I think it was about setting the fulfillment method of each item again to delivery.
