Is there a way to do a deduction for a paycheck?
I have employees who use the open ticket feature to charge stuff through the week and I take it out of their pay.

You can add a deduction to the employee's paycheck. It can be set up through the employee's profile and you will create a garnishment or post tax deduction. Use this article for reference: https://squareup.com/help/us/en/article/6063. Keep in mind, you will have to edit the garnishment manually each pay period.
