Is there a way to add a percetage to only some sales. Using a percentage instead of a $ amount?

Not natively in Square, no.

The best idea is to have a "Service Charge" (or the like) item that's a variable price. When you need to add this to the sale figure your percentage manually and add it here.

I moved your post to one of the existing threads for this same question.

As @ryanwanner listed above- you can add an item with a fixed price or you could add a tax and name it what you want.

These are really the only options for what you're looking to do.
