Is there a way that I can disable asking my customers for their phone number?

I will never call or text my customers and have no need for this information.

The reason for that information is for your customers' convenience, allowing them to receive an emailed or texted receipt. You can turn of the screen if you're trying to save time at the end of the transactions though. https://squareup.com/help/us/en/article/5684-skip-the-receipt-screen-to-speed-up-checkout
