Not sure how to handle this in inventory. Advice needed.
Our inventory is typically made on demand rather than having it in stock all the time.
In other words, our inventory is typically custom made for our customers when an order is received.
If/when I set up tracking on an item, and have 0 stock it shows an "Out of stock" message on my image which I don't want.
Is there either a way to turn off that message and still track inventory, or is there another way of handling the tracking of sales?

Assuming you're referring to the Online Store, there isn't a way to sell online without tracking inventory and entering a stock amount. The only thing to do is enter a large number for stock and keep replenishing it for the sake of allowing customers to order.

I primarily sell using the square magstripe reader - online isn't active yet
The inventory control/library helps me identify items I need to create for inventory restocking (I do have some items I keep in stock).
If I set those items to a large amount, I'll lose the ability to have a low inventory report, correct?
Would it be better to have separate inventories for online and in person sales?

Before we dive into this, are you using the Standard Point of Sale or Square for Retail?

No worries! You'll need to subscribe and pay for Retail, which includes Inventory Reports - like COGs, projected profit and other advanced reporting. Sounds like you're using the Standard POS which doesn't include those inventory reports, so inflating your stock amount's wouldn't matter or affect reports.
Do I need that Retail version if I'm only using the app and the online store?
I don't think I need much more than that at present.
If you wanted access to the reports that @JustinC mentioned, then yes, you'll want to subscribe to Square for Retail Plus.
