I have have various complaints of clients getting reminder messages even after the reminder setting has been disabled or in my case uninstalled. So my question is how do I actually stop this from occurring? I see no value in something giving faulty data to clients.

Set and edit appointment email and text message reminders settings from Communications in your dashboard. You can remove all reminders if need be.
