I booked an appointment and accepted a deposit through acuity, how do I collect remaining balance?

I'm using acuity to have customers schedule events at my venue. I require a partial deposit to hold their spot. Most people book online at home. When services are rendered at my brick and mortar location in person, they pay the remaining balance. Does that show in Square POS at all? I've linked square to acuity and see deposits just fine. But I don't know how to complete the transaction in person using my square POS onsite. I could do a custom amount but then the deposit wouldn't be included for tax and tip purposes.
