I accidentally unsubscribed to our receipt emails and I don’t know how to resubscribe. Does anyone know how to?

Quick clarification here: are you talking as a customer receiving emails or a merchant receiving transaction emails?
If a customer, the next time you're at any Square merchant, when you swipe your card, you should see the "How do you want your receipt?" screen, where you can enter your email again. This automatically links your email to that card, and any time you use that card at any Square merchant, you'll automatically get their receipts sent to your email.
If you're a merchant looking for the transaction emails, on your web dashboard, go to Account & Settings -> Email Notifications. Scroll down to the Transactional Emails section and check the "Per Payment" option.
