How to set up profit share event

I have a local middle school reaching out asking if my business would be interested in a profit share event. I would like to set it up such that donations only come from customers who mention the middle school. Has anyone does something like this before? How do you flag these transactions such that it is easy to run a sales report for just these transactions at the end of the business day?

The best way to do this will be to add the middle school's donations in their own category (preferably named after the middle school itself). Then, you can consistently view your sales by category and view exactly how much was donated to the school by looking at the category sales.
