To toggle offline mode off and on, here are the steps to follow:
From the app, you'll want to find > Settings from the menu and then you can find > Offline Mode from there to switch it off/on.

I have this same issue with my Galaxy S20 FE.
When I connect it to WiFi, Square says no internet connection, even though chrome, email etc all work.
I turn off my WiFi and just use the Cell tower and it works fine.
Turn WiFi on and then Square goes to Off line again.
This is not a problem for me since I use Square Stands for my payments and not my Cell phone but I can see where this is a problem if you are trying to use WiFi at a trade show or other event like that.
