My default appears to be instant transfer which is adding up to significant additional fees. How do I switch it to the standard free transfer option?

Look below the tap. It should say free transfers 1 to 3 business days. If not you need to call square and have them add that tab for you

It sounds like you've opted into Same-Day transfers. Take a look at this helpful resource, it will point you to the Online Dashboard where you can edit your Transfer settings within the Account & Settings tab.
