Square stores all relevant payment and account information on our secure internal systems. When you first activate Square on your mobile device, you will be prompted to use your cellular data or Wifi connection. This data use is required for processing payments so that each transaction can be uploaded to our server in real time - negating the need for periodic 'backups.'
I will note that Square does offer an option to collect payments while being disconnected from any network connection. Offline Mode gives you the ability to process transactions without a cellular connection, but these type of payments do need to be manually uploaded at a later time.
