I’m having trouble trying to set a window for when people can book appointments or set it up where if they book I need to confirm it. I woke up the other day thinking I was going to be free but had 3 confirmed appointments & I thought I set it up so that people cannot book within 12 hours.

I would recommend taking a look at this Support Article about navigating through your Appointments Dashboard.
Also, there is a setting that gives you the ability to confirm those appointments manually, instead of automatically letting the customer book them. Go to Appointments > Settings > Calendar & Booking > Reservation Guarantee.
