I had a customer purchase a large amount on an egift card because I was running a special. She has purchased services of about half. How do I deduct that from the total available on the egift card? Im only finding how to clear the entire amount.

Check out this Support Article on how to accept the eGift Cards your customers purchased.
The card has a code like a card number, so you will be able to enter it and keep track of the balance through your Dashboard's Gift Cards tab.
