I did a test charge for an event in my online store and when the email confirmation came through I noticed the photo on the 'ticket' was blank. How or where do I add/edit the photo in the site editor?
Is that event showing in your item library dashboard? If so you may be able to edit the photo from the item library. However, the last time I tried that it changed the event into just an item and wouldn't let me change it back to an event. That was over a month ago so maybe they fixed that issue.
As @HeyItsMuff suggested, you'll want to a a photo to the event "item." Head to your Item Library, select the event, and add the photo you would like to appear. Hopefully that helps, but let me know if that doesn't do it!
