I'd like to be able to add "employees" but they be taking payments. They will simply be finding clients to book with the company. How do I set that up?

This is a good question, currently there is no way to limit a staff member from accepting payments. This is the default setting for Employees and Staff Members on Square Appointments.
In the event that they process a payment it will be deposited into your linked bank account.
