How do I delete an incorrect item

Thanks for posting in the Seller Community.
It will depend on what device you're using to take the payment. If you're using our app, you can press the C on the keypad where you enter the amount. This will clear the amount typed in, and allow you to input the correct amount before processing the sale.
If you've already processed the sale, you'll have to issue a refund and re-do the charge. We don't have a way of editing sale amount after they've been processed.
