I would like to choose email/text from my customer base to send a digital reciept rather than enter it. How can I do that?

Currently there isn't a way for you to set or change your customer's receipt preferences (you can resend a receipt!). Square's Automatic Receipts feature allows your customers to enter an email address or phone number to receive a receipt at the end of each sale -- automatically. Your customers can update their preferences from any Square receipt, or at the end of a sale.
