Every day, when I turn the Square Register on, it shows “Installing Software Update" for 7 minutes. Then it shows “Customer Display is updating" for a few minutes.
Why?

It's weird that it happens every day, @FSL_BGR, since Square doesn't issue updates daily, at least as far as I know. This would happen to us occasionally when they did issue a new update, so I stopped powering the Register down at night. After closing the cash drawer, I just let the display go to sleep overnight so any updates will be downloaded when we're closed.
It is frustrating when customers come in right at opening and you can't process sales because your hardware is updating.
Note: I do power the Register down completely from time-to-time to allow it to operate more efficiently. I do this approximately once a week, on a day when we're not open.

I would say to make sure that your internet connection is strong. Here are some tips that could help with this long update delay that you keep seeing.
If those tips don't help, I'd suggest reaching out to our Hardware Team so they can investigate this more in depth with you.

No need for that. You're new to the Register and I made several errors when I was first getting started too. The only dumb question is the unasked one.
