Yes!!!!! Square works with any US-issued and most internationally-issued magstripe or chip cards bearing a Visa, MasterCard, American Express, Discover, JCB, or UnionPay logo.

To answer your question more specifically, yes, you can accept Discover cards manually so long as you have all of the required card information.

why can't I enter a Discover card manually with an exp date of 7/26?

There is nothing preventing Discover cards from being manually entered.  I would guess 1 of the numbers is off when entering the info.
