Default category for API credit card purchases?

We use a third party service (TripleSeat) which integrates with our Square account for purchases.  A customer buys something via our account at TripleSeat and they run the customers credit card through our square account to buy the item. The items price is different everytime; TripleSeat is really just running the card through Square (instead of Stripe, which is what we had setup before).

the only problem is that all of these charges are coming in as "uncategorized".  I would like a default category set on all of these items.  Is there a way to have Square set the default item or category for these custom charges.  I use one "location" in square for these charges so it would be fine for all items at this location to use this category.  I just don't see how to set it up.

or is this something Tripleseat should be doing when it posts the charge?

At this time the API integrator (TripleSeat in this case) is responsible for passing the information of the transaction at this time the API they are using is the Payments API they would need to also use the Catalog API so that your inventory can be updated or modified when processing a payment via their platform. I recommend reaching out to them with this inquiry and asking if they have any workarounds or plans to make this possible.

Of course we are in a situation where Square would say it is the API integrator and the API integrator would say it is Square.  I can just be stuck in this circle.  

My question to Square is how should they be doing this?  What is the API they should be calling in order for sales tax to be applied?  It doesn't make any sense to me that square is specifically NOT applying sales tax by default to every transaction in this location because I have set up the location that way.

Your answer is a non-answer to me.  You need to tell me what they are doing that is wrong or how they should do it correctly because I have set up everything correctly on my side.  I say apply sales tax all the time and Square is then NOT applying sales tax.  

(This has nothing to do with inventory at all.). If you don't understand what I am asking for, can you put me in contact with a developer that does or show me where I can post an API question and get a real answer.
