Custom Amounts and categories

We are just starting with Square and using Cognito Forms to take information on the web with Square payment in addition to taking information and payment at the musuem counter.   The problem that we just discovered is no information is going over to Square other then the payment when this is done through Cognito Forms on the web.   Anything coming from Cognito Forms into Square just shows as a Custom Amount.   There appears to be no way to add a category to that custom amount and thus it will be a bookeeping nightmare. 

 

Does anyone know if you can add a category to a processed transaction that just falls into custom amount.  Or does anyone know of a way to send over a category form something like Cognito Forms.
