But what is the core difference between using a 100% discount vs a comp?
They both obviously achieve the same thing, but i'm trying to determine the "process" for our coffee shop regarding "employee meals" and how to track and discount them (we discount them 100%)

Essentially yes, in the way you're using comp and discount - it's achieving the same thing.
Normally, sellers offer a lower percentage for the employee discount, while comp will always be a sexo cost to the employee.
