You won't be able to adjust the Invoice once it's been paid (same goes for any completed transaction), so in this case a new payment would have to be made, which I know isn't ideal!
If you haven't been already, be sure to check the "Allow Customer to Add a Tip" box in the lower right corner of the page when creating a new Invoice. Hopefully that helps!
