Can you accept a payment without the signature?

I have customers who are far away from my location who are willing to provide their credit card information to me. 

The problem I have is, they are not able to sign because there are not meeting with me in person. 

Can I accept their payment without a signature? Just the credit card information?

I just read, this morning, that you can do that. You would enter the card number along with the security code, and when the screen comes up for a signature, write something like "Phone Order".
