I'm a consultant with an office but a majority of my appointments are for coaching calls.
The current options in Appointments (on the Booking Site Setup page) allows me to offer appointments either at "My Location", "The customer's location", "Both my location and my customer's location" or via "Phone Only".
I'd like to be able to allow my clients to use Appointments to choose to meet via phone OR at My Location.
This option is not avaailable.
Is there a way (or workaround) to do this? If not, please consider this a feature request!

You're not able to customize the appointment locations further than what is offered, but I can see why this would come in handy when booking appointments.
One work-around that comes to mind would be to create a service titled "Phone Appointment" or something along those lines, and have it available to be booked noting in the description that the appointment will occur over the phone.
Not ideal, but it could work for you. I'll send this feature request over to our Appointments team, and hopefully another seller can chime in with their ideas.
This is exactly what I am looking for as well! Actually, I want to be able to give them the 3 options, phone, my place, your place.
