$100 +$25 payment processed on a prepaid visa $100 gift card, but no error or remaining balance?

A client paid for services of $100 and added a $25 tip. He had a $100 gift card that was processed. The app processed the entire $125 on the $100 gift card. Now there is a dispute on the payment, it claims to come from the client but he states that he never disputed. 

 

I'd like to avoid this in the future. How does a client split the payment after the fact? Why did the register not do a lack of funds error? Is there a way I can avoid this whole mess in the future?
