I own ice cream trucks. I’m wondering how I set up an employee who will receive an hourly rate when doing booked parties and straight commissions when doing there own routes. Im new to square payroll. Thank you.

Under the Payroll section, head over to Team Members, and you'll find the option to add another job with a different wage, see picture below.

Can you pay that employee both rates in the same cycle? For example, I have staff that both wait tables at one rate and then switch to cooking for other shifts in the same week.

I'm pretty sure you can if you schedule them at the different positions for different shifts. So if they are scheduled as waitstaff on Monday and clock in as that, and then are scheduled as cook on Tuesday and clock in as that, the time card will calculate at the corresponding rate.
