Hard to believe we don't have the ability to set holiday hours in advance.

We should be able to do this in advance and not have to remember to turn off/on at the right times. I'm on holiday - I don't want to have to do this.

Are you talking with the online store? It is available!

Dashboard -> Settings -> Account & Settings -> Fulfillment Methods -> Online Pickup & Delivery 

Edit your location, then on both the pickup and delivery screens scroll down to the Restricted Dates section. Enter the days you will not be accepting orders here.
