Is there a way once I make an appointment and set up a price for the service and time slot for a costumer that the price can be locked or not changed by an employee during the check out on the pos?

Welcome back to the Community.
One avenue I would suggest you to check out would be the Permissions you have set up for those employees. You will want to look at Checkout and not allow your employees to enter changes.
