I have Square POS app in my iPad and I am trying to create a new category on my iPad I am not finding a way to do that.

Apologies for any confusion. Here are the instructions on how to create categories and organize your items within the Square app on an iPad:
To move items into categories:
Tap the three horizontal lines in the navigation bar. Tap Items > Categories. Select the category you would like to move items to > Edit Category. Select the items you’d like to move > Save.

How do I add a category to items in "online checkout"? They come up as "uncategorized" in reports.
Categorizing items for checkout links shouldn't be any different than Isabelle's steps above.
Have you checked if your items are categorized? @WHUR
When I go to items, the "online checkout" items are listed. When I go to "online checkout" there is no option to assign a category that I can see.
Categorizing items cannot be done from the Checkout link tab, only from the Items Tab. As long as your items are properly categorized, Reports will reflect as such.
I would reach out to CS so they can take a deeper look and see why your Checkout link sales are not being categorized.
