How can I create an order from an invoice
I just went to close out a completed order that was generated from a paid invoice but the order isn’t in my order list. I went through all my orders and invoices and noticed only orders generated from my website are listed. None of my paid invoiced orders are listed. Some of customers don’t order off my website so I generate and send them an invoice via email. How do I generate an order from a paid invoice? The items listed in the invoice are from the same items list on my website.

Invoices are invoices. No transaction in square can be changed once it's completed.
So, there's a couple things you could do here.
For single items, you could use a checkout link that you email, text, DM, or add to their facebook, instagram, etc. The nice thing about checkout links, if you're selling the same thing over and over, you just create the link once and keep sharing it.

You can now create orders on the POS, if your agent is creating the order and taking payment in person or over the phone. These orders will show up in the Orders list.
You can also create an order on the tablet POS and send a payment link. I have not tried using this method yet, but as far as I can tell, it should appear as an online order and also show up in your Orders section. This would allow you to create a custom ticket for a single person. So, item a, item q, item s, whereas it may not be a common set of items on a ticket, it's just for the one sale.
Keep in mind that most of these options require the latest version of Square POS and is not available on older tablets, as I have painfully learned recently. Starting the process of upgrading multiple iPads...
Are these invoices typically custom, or do they tend to be for one item?
Is there a particular reason why you're using invoices instead of the customer ordering from the online store? All payment methods with square are secure, and they all basically use a link to send you to a webpage to input a credit card... So I think for a single item, I'd use the Checkout Link, and if it's a tailored order, I'd use the Payment Link from the POS.

Thank you fir your quick response. I am a one person charcuterie business and I don’t have a POS system. I can’t even use the little card reader because both my iPad and phone has USB-C ports and no headphone Jack. I have a commercial kitchen and do delivery only. For whatever reason, even though I specify on everything that you can securely order and checkout from my website, I still get calls, messages and texts for orders. I try to get folks to order from my website but fir whatever reason, they won’t use the website (I also still get customers that have issues with the website that I can’t get help with, so I invoice them) they will insist on giving me their credit card number over the phone, which I politely decline so the alternative is to get their email and send them an invoice which they can pay online. I never heard of a checkout link and wouldn’t know how to set it up. I have 7-9 board options at any given time that they can order from the website and the invoice option in the square dashboard has a drop down that lets me select which one of the 7-9 boards to bill for on the invoice. If I didn’t send invoices in lieu of website, I’d lose 30% of my business.
