I have socks that come in 4 sizes and 4 colors. But, I need to track inventory too- ex: Medium size has none in brown, 5 dark gray, 7 light gray but XL has only fawn. Can I do that?? Seems extremely clunky not to have this option, I've been reading help articles for hours!

You can make this happen, @fallingstarfarm - let's walk through this together!
You'll start by creating an item - I named mine Sock for this example. Once you've decided on a name for the item, scroll down to the Variations section, and click the Add variation button. You can even create multiple variations within this pop-up screen by clicking Create and add another.
Once you've got all of the variations of color and size that you currently have in stock, you'll have a list of variations in the Variations section. To add stock for these variations, click the variation you'd like to add stock to, and you'll get this pop-up screen:
Click Manage stock at the top of this pop-up to add stock, track inventory for this specific variation, or to toggle on low stock alerts.
Once you've gone through these steps, you'll have something that looks like this:
If you want to edit stock track and alerts for all of your variations at the same time, you can do so by clicking the Edit Stock Tracking button in the bottom right-hand corner of the screenshot above. The pop-up will look like the screenshot below, and here you can bulk edit your variations' stock and stock alerts:

Thanks very much! I ended up doing exactly this, got the idea from another square site. My screens do not look like your example though, similar but not exactly. Wonder why?
It was all fairly easy to set up overall, I’m sure it’ll get easier as I get used to it. Publishing soon!
