I am going to New York (USA) for 1 week and while there I need to take payments for the products I'll be selling.
I have an Australian Square account.
Will my square account still work while I am over there and do the normal $ conversion at the checkout point or will I need to create a new US Square account?

You are correct! Your Australian account will not work while visiting the US.
Cross-border card payments are unsupported. This means that card transactions attempted outside of the country where you activated your Square account can't be processed with Square. However, you can accept cash transactions while traveling internationally.
