The section that deals with this wants me set up an entire new email, but I only want to edit the one that's already being sent. There is a default email going. My pickup point is not an actual shop so I need to arrange the meet time. The email says that your item is ready to pickup and shows my address on the Maps

Currently, there isn't a way to edit this default template that is sent to your customer via text advising them their order is ready for pick-up. Square Online will require you to enter a valid address for your Square Online location in order to offer pick-up as an option for your customers.
An alternative option could be to switch off the Text message alerts and instead add a Text box modifier requesting the customer's mobile number to arrange a pick-up time and location (if you make this a required field, customers will need to input this information prior to checking out).
