how to use customer name instead of table number?

We have a sports bar and most of the customers are 'regulars'. The bartender opens a ticket with customer's name, and they can order drink after drink and stays as long as they want. Once they are ready to leave, the bartender brings the ticket-based name for check out and completes the check!
How can you achieve the same in Square?

Hi, @goxmonumentbar ! 

You can do this with Open Tickets! 

1. Open your point of sale app app.
2. Tap Checkout > Tickets.
3. Tap New Ticket or tap, dip, or swipe the customer’s payment card.
4. Enter a ticket name and an optional note, then tap Save.
5. Add items or custom amounts to the ticket.
6. Tap Save ticket.
7. If an open ticket reaches the item limit, select Save ticket and create a new one.
