I noticed that some items that I have with variation are going under the uncategorized when l pull reports, It does have a category under the categorization. can anyone help?

This sounds expected. If a category is deleted, it won't be automatically assigned to a new category instead. We won't automatically (at least with how things are currently) reassign a new reporting category as it'd be a bit confusing if we just automatically assigned categories if a seller was wishing to delete categories and leave something uncategorized.

This is a potential bug @Summer2024 since the migration to square dashboard categories from square online. If you delete a reporting category the item will go uncategorized instead of assigning a new default reporting category automatically.
They need to implement a "error" on items with no reporting category and prevent the deletion or offer a solution, or at least add a filter for "no reporting category" because technically items still have a secondary category in many cases.
Just letting you know @JTPets @Thistleandclove , I am escalating this now. I have been playing around with it and get the same results.

Right but there is no way to identify those missing a REPORTING category currently easily inside square
