Today every item in an item category scanned as "item not found" at checkout. I found my entire collection of items from a particular vendor is missing. It shows as deleted In my stock history. I did not delete this. How do I get all these skis back into my item library?
Did you check your Archived section?
Yes, it is not coming up there either
This has happened to me once as well
Along with some deleted items, I also found that some of my items that were deleted by myself have been restored.
I guess there must be a database backup rollback for some reasons.
Can a square tech fix this for me?

Firstly, I understand that is rather frustrating. I have not personally heard of anyone else with this issue, so I am sorry to hear that this has happened to @Daniel322, as well.
In regard to your question about tech supporting stepping in to help, I can definitely see what we can do. I can go ahead and reach out to our eCommerce team on this. Do you by chance have the name of the Collection that was removed?
