Question about online ordering setup

So I'm new to Square online and I have a BBQ Catering Business.... I'm using Square Hosting and have it set up for online Ordering for Delivery and Pickup as I don't have a brick and mortar business.  The problem I have is for my business its not ideal to get a full payment upfront and I usually just need 50% down then final payment on delivery.  I would prefer the visitors to my site email me for a quote and then I can use my Square equipment to take payment via Credit Cards.  So basically the website is just a site to see my items and their descriptions with the cost per Item and does have links to my email on multiple pages and headers.   My problem is if I turn off Online Ordering when I preview my page all my Items say "Out of Stock" which I don't want to say as it may deter people from my site.  Is there a way to fix this so It won't say "Out of Stock"

ok site is back up....so where it says "book now" I'd like that button to go to my email so they can request a quote,

 

Right now online Ordering is turned on and I have Pick-up and Delivery turned on but if I disable any of those my items say "Out of Stock"

@Hogzindahoodbbq First of all, now I’m hungry! Your food looks downright amazing.  My husband hails from Owensboro, Kentucky, so we know a thing or two about great BBQ and fixings.  Anyway…..

 

There are a couple of things here.  First, the Book Now button.  Most any button in Square Online can be configured to perform lots of actions.  Currently, yours is probably configured as either an Order Online or Standard Page action (Link to: in the image below).  Change that to the Email Link action, provide the email address and save and publish.  This should cause a new email to open on their device when customers press the button.  Note that you can also change the text from “Book Now” to anything you want, really.

 

Secondly, your Out of Stock issue.  My first thought is that you have a site preference set wrong.  So, let’s try the most obvious fix.  Go to Online -> Shared Settings -> Item Preferences.  Scroll down until you see the setting “Out of stock indicator.”  This is probably toggled on.  To toggle it off, click the Edit button at the top of the Item Statuses section, toggle it off and save.

 

This should fix both issues, though there might be more to the second one than I’m thinking there is.  But I always start with the most obvious fix.  If that doesn’t work, let me know and I’ll dig a little deeper.

So I turned off Online ordering and pick up and Delivery, I customized my "Book Now" Buttons to link to my email but I'm still seeing the "Out of Stock" on all the Items that I need to not show up...Basically the Site is just for seeing what I offer and the Prices and then they will email me for Orders.
